Flat bread with SOUMAINTRAIN

Ingredients

Flat bread dough:

  • 300 g of flour
  • 5 g of active dry yeast
  • 125 g of Greek-style yoghurt
  • 1 tsp. of salt
  • 1 tsp. of sugar


Recipe:

  • 100 ml of warm water
  • 6 turnip tops
  • 1 half bunch of parsley
  • 2 garlic cloves
  • 1 SOUMAINTRAIN PGI (250 g)

Preparation

  1. Mix the yeast, water and yoghurt. Add the flour, salt and
  2. sugar. Knead for approx. 10 minutes. Cover the dough with cling film and let stand for 1h30 at room temperature.
  3. Cut the Soumaintrain into slices. Preheat the oven to 270°C. Deflate the dough and divide into 8 balls. Flatten each ball of dough and place them one by one in fine semolina, on one side only. Place them on a baking tray. Flatten the centre of the flat bread and form a rim.
  4. Place 3 generous slices of Soumaintain on top and bake for 10 minutes.
  5. Drop the turnip tops into a frying pan over high heat.
  6. Chop the parsley and garlic, place in a small bowl and add olive oil to cover.
  7. Remove from the oven and place a few turnip tops and a little parsley and oil on top of the cooked flatbread. Enjoy while it’s still hot!
